Link would win because:
1) Link has more weapons.
2) Link has a shield, Cloud doesn't. Defense beats offense.

Would this be a general thing? 'Cause with all Link's weapons from across time, he'd kick a lot of Cloud clean into space.

Link has speed (Pegasus boots/bunny hood) on his side along with several ranged items but his shield probably won't protect him from Cloud's sword, I don't know what magic Cloud knows so I'll have to say it would vary depending on location

The Mirror Shield would have a chance of blocking Cloud's sword.

Those that have ever seen Cloud fighting should know his ability is beyond Link's comprehension. Seriously. This really isn't a debate. =/

damn I wish we could get scenes like that in a Zelda game!
Speed-Link's top speed in any of his games wouldn't match but as I said before mixing pegasus boots with the bunny hood may give him a large boost but would it be enough
Strength-overall cloud would win this one with his sword and other things but if Link used some other weapons in the right way he may stand a chance albeit a small one
Defence-Link's shields, Nayru's love, Goron and Zora masks win this one
Agility-Link's speed bonus with the aformentioned combonation wouldn't give him the best control and his lack of aerial mobility makes him an easy target
Magic-Link's many spells and magical tools would be a force to be reckoned but could Cloud pierce Din's fire or a light arrow?
The fight would be a bit of a game of cat and mouse, Link running away and shooting back with arrows, magic and bombchus at Cloud who'd avoid/destroy them and continue until Link had no more room to run and a battle would ensue, Link's shield would eventually break and the Master Sword would be knocked out of Link's hand leaving him vulnerable as Cloud delivered the final strike.
