ok when the screen comes up telling you of the money you earned there is one that says side games is that something you have to discover or are they only on certain courses?

side games refers to any money you bet on the match in paticular... e.g. if you bet $500.00 and won then the side games entry would show the winnings!

No, No, No.
Sidegames refer to "Longest Drive" and "Closest to the Pin". You will only see these when playing a head to head matchup with mulligans turned off.
This game is way too easy.
