I am thinking of getting Jolteon in one version and Espeon on in the other. I am not a huge fan of Umbreon.

On SS my Lvl 55 Blastoise. Just beat Red ad going hunting with a fully new party.
On HG however (Rom'd because I don't have the cash to buy it on top of SS) it'd have to be my lvl 89 Umbreon.

lvl 75 typhlosion or lvl 100 empoleon but i dont really use empoleon or giratina lvl 100 or rayquaza lvl 100
