Use items as shields, and always be power sliding and wheelie-ing when possible. It gains your speed. Also, skip the tricks, just make a short jump for your boost.

You can find out more ways in Carlyon's Ulimate Guide. It's stickied at the top.

People keep saying that drifting is hard with the Wii Wheel, but I find it pretty easy...

The players still keep on finishing way before me, though. >.>

You should just wheele at all times when there is a straight path and drift when there is not a straight path.

I still get, like, murdered there. I have no idea which way is up or down or whatever. I'm in first place, and then I somehow drop to twelth.

I guess so. Personaly I hate mirror mode so I try to avoid playing it at all costs. It is such a pain trying to get three stars in it.

Just try and keep to the insides, do tricks as often as you can and always keep a few items to shield yourself. Like you say though, you can drop from 1st to 12th in an instant so you just have to have general skill or experience I suppose. If you keep trying, you'll eventually get the hang of it.

You should also pick a kart or bike that's well-balanced in stats. Like pick a faster one, but only if the other stats are good enough too. I would also recommend that you pick a heavy weight character.

If you're using Rosalina, pick the Bowser Bike.

I think more practice could help you.
