Cyanide I'll just spin some uber obvious shit your way;
Uncharted 2
Red Dead Redemption
Mass Effect 2
Demon's Souls <- pure win
As Two_Step said Crysis 2 is pretty fantastic as an FPS.

I tried it on my friend's 360, but I didn't really get into it because I felt like it was a bit slow. I want to play it, but not til it's about 24-30.
I ended up buying Lost Planet 2 because it requires 250+ hours to platinum and it isn't possible to platinum in under 15 weeks.

Man, you have really good taste in games.
Very picky about what I'll play

That's the problem. There are hundreds of games I haven't played but I could tell you why I wouldn't waste my time on every single one.
Cyanide As mentioned in other responses,
Mass Effect 2 - Epic story, makes you care a lot about the characters and gameplay is generally pretty duck and cover.
Demon's Souls - When this game came out there was a lot of people that pre-ordered it and traded it in because it was too hard. I mean, you die in the tutorial, hard. The game is less about story and more about aura and gameplay. You aren't a super hero - you can't take a hit and keep moving. You're the lone warrior in a land covered in demon infested fog and you're there to... kill demons, what else? The game is hard when you're starting it because it has a steep learning curb.. but you will never feel like something is impossible. When you do die, it's a learning experience and not always a frustrating event.
You could also try some exclusives like Uncharted. I was a little resistant to Uncharted because they use to say that it was "dude raider." It's not anything like tomb raider.

Wow, I am extremely disappointed with Super Street Fighter. I recently bought SSFIV AE because I love fighting games and thought MK9 was really good (despite horrible online issues).
I built up lots of hype and was really excited to buy the game only to find that it was extremely hard to even combo one punch to another. On the challenge mode, I linked a medium punch to medium punch finally. That took me 1 hour. This game is by no means friendly to new-comers, which I don't understand how they even sold so many copies in the first place. At least the streams are fun to watch.
Unfortunately, SSF is only a good game if you want to spend TONS of hours learning how to just combo 2 moves together. I can see it being fun once you master a character or even learn basic combos for a few characters, but you will have to spend at least one year with the game I am convinced. Time to sell the game after playing for days upon days.
In short, I do not recommend this game. Instead try MK9 or wait for SC5.

God of War Collection and God of War 3 is worthwhile if you want a good story.
There's an Uncharted 1 & 2 bundle coming this month so if you want that series (highly recommend) get that.
Demon's Souls is probably the best RPG on the PS3, absolutely amazing game. Very difficult but very rewarding. There's a sequel in October though, and no story connection so you could wait for that because it looks to be even better.

Can you guys recommend a few games for me?
Generally, I love RPGs and shooters and difficulty is never a bad thing. Anything but the utter obvious like Uncharted and stuff.

Have you tried Valkyrie Chronicles? It combines RPG elements with third person action. It is pretty excellent.

FraserLost Planet 2 is a fun game. It's got an arcade style feel to it. Third person shooter, big epic boss battles, unlockables, and a die-hard online community.
Singularity is a mash-up horror shooter. The online community is probably dead as dead can be.. I got the game 2 weeks after release and I couldn't get games past 11pm.. so it was never very big. You wont be able to platinum it, but the game itself is still fun.
I just purchased
Army of Two 40th Day I'll let you know how that is when I get some game time in.

You can get Red Dead Redemption from GAME for £15, it's got about a 20 hour campaign and then plenty of things to do after it, it starts a little slow but when it picks up it's REALLY fun, and that's coming from someone who doesn't like Westerns

I second that recommendation. Red Dead Redemption is that only game, by Rockstar, that I like.

If you liked the first Infamous, the second is now out and improves on a lot of the stuff of the original.
Beyond that, maybe Killzone 3?

I don't know if anyone is looking for a Platforming / Action game for under £10, but I HIGHLY recommend Ratchet and Clank: Tools of Destruction. Best of the series IMO. Also if you like free roam and racers, get Burnout Paradise (also very cheap nowadays). You'll need around 1500 MB of updates when you put the disc in, but it sure is worth it!

Not to mention the fact that Burnout Paradise has arguably the easiest Platinum of all games.
