Go for either Timesplitters 2 (or wait for 3) or any Smackdown game from Shut Your Mouth to Smackdown vs RAW.
Splitters 2 is undoubtedly the best multiplayer game EVER for FPS, and it will get an online edition in Future Perfect, knocking Halo 2s larger than life crown off for certain.
All the Smackdown games have plenty of weapons and fighting, with tonnes and tonnes of match options, inclduing tag if you want to play co-op, or elimination chamber 6 man tag for a real challenge. Smackdown vs RAW also has online, but it is perhaps the worst online mode in any game yet released to this world. Shut Your Mouth is the best Smackdown game for all and out mayhem however, which is surely what you're looking for.

MGS3 is probably the best stealth game ever made. I would go with it. Plus it's pretty easy for a beginner to the series. Def Jam is kinda fun, I prefer VF4 and Soul Calibur II but it is better than the first Def Jam. And for Battlefront, get Socom 2 instead. Much better Online shooter.

Metal Gear Solid 3 I would say. Its not out here yet in the UK (despite the fact that index have it "in stock"), but the name sells itself.
Def Jam has its moments, and if you're a big hip hop fan it'll probably appeal to you more. Lack of online play takes away any lasting appeal, as it would've kicked major ass online.
Battlefront I can't comment on as I haven't played it, but apprently the online play is very laggy and buggy. Thats all I know.
