But I'm about 5 hours in and I still haven't grasped how throwing weapons is meant to be useful in the slightest. You throw your item, and potentially lose it, and when you pick it up it doesn't return to its original inventory slot. It doesn't do much damage, and it's completely useless if you're facing more than one enemy at a time.
I'm still completely new to the game though. Can anyone nudge me in the direction as to how I might not have picked the most useless class in the game?

Logan if my favorite character to play with and then Sam is my 2nd favorite. I had a level 50 logan character and he was pretty kick ass.
I was Logan for my first playthrough. His kind of an allround kind of guy. Compared to the others at the start, his pretty balls. But when you get to around the halfway mark he starts kicking ass and only goes up from there.
same thing here, yeah half way mark, and he becomes pretty boss.

get the boomerang ability and get it leveled up until you cant level it up no more, then you can throw knives and that sort of thing and have a chance to get it back, hes also good with moltov cocktails

Principality
One of Logan's skills allows him to recover health whenever he is drunk, which is pretty useful.
He also has the Boomerang skill which automatically returns thrown weapons to your hands with a 30% chance at max level. I have found that to be pretty useful.
I haven't tried out the other characters though, so I am not sure what their skills are like in comparison...

I agree with Axe in saying that Logan is helpful with suiciders. They are such a pain in the butt sometimes.

Celes Leonhart
In the main menu it suggests his speciality is throwing but I haven't found it viable in any scenario. It has specific uses but generally as an attack it's pretty balls.

Axe
Throwing weapons comes in really handy for Suiciders, or hitting enemies that you can't quite reach. At least that's what I use the feature for. Maybe hitting propane tanks every once in a while.
Logan's kinda the everyman from what I remember of his skills, but I only breezed through Act I as him so I couldn't tell you with certainty what his main use is.
