Escort quests are not that interesting, but somehow they've indeed gotten better. However, uncontrollable behaviour or unmanageable acts of the NPC is really annoying.

A few times she ran to where we were to fight shit, then ran back quite a bit and stood there for a few. Next time I do that quest, I am going to let the whore die.
The reason this happens is when you aggro something the npc will run to where you are and help fight it (usually, sometimes escorts like to just ignore you) and when the mob dies the npc runs back to where it last was on its path. Best way to deal with most escort quests is to let the npc go first and kill anything it aggros. Then you just have to deal with the painfully slow walking speed of them.

i usually skip them, but on every character i've solo'd the catacombs quest... its easy as feck...
I don't care how easy the quests are; most of the NPCs who need rescuing are dumbasses who don't know how to run. there's only one escort that i actually liked, and that was the one in Howling Fjord, with the undead guy who ran faster than I did.

god damnit i hate these quests...i specifically hate the one in RFK with the goblin....he walks 2 feet per hour and he aggroes shit loads....it pisses me off....then i did the / so i could walk with him......i outran him and failed it.... always give greens at the end though so i usually do every escort possible

At last in Outland and Northrend they can run. Just waiting for them to walk from one place to the other without aggroing everything is annoying enough.
