Time Paradoxes in LoZ:OoT

And that's not a paradox; quite the opposite. Sci-fi fans often call it a "stable time loop" - though, technically, it's not a time loop, either. It's just logic. He taught it to you in the future and you taught it to him in the past, it's self-rectifying.

A paradox would be if, say, Link somehow went back in time and killed his mother before she gave birth to him. Then he wouldn't have existed, and thus couldn't go back in time to kill her - so he would have existed, and could go back, and so on and so forth. This is known as the "dead grandfather theory" (since, normally, it involves going back and killing one's grandfather rather than one's mother). The simple answer to this is that, if Link tried to go back and kill his mother, something would happen to him to prevent him from reaching that goal. Regardless of what WOULD happen in any kind of theory, Link DOES exist, and therefore, cannot wipe himself out of existence; the timeline is pre-established. He would either die before attaining his goal or have a change of heart - the laws of physics literally prevent him from following through.
