I dont think the Deku Scrubs appear in this game (not sure). The Gorons where as good as extinct also. They where the traveling merchants that you traded the flowers with. The Zoras evolved into the Ritos and the Kokiri evolved into the Koroks (hence why Makkar is the following sage after Fado who was a Kokiri). The Deku tree also says when you first meet him an the Koroks that "even tho they r no longer human, they will always be my precious children of the forest" (or something like that dont take that as a precise quote lol) ah! I forgot about the merchants... yes I knew that were gorons -------------------
