A few family tree questions

I accidentally deleted my save file so I'm playing through the game again.

In the mansion there's a lady who says she won't sing the paper until you get her some cheese. Where do I get the cheese?

And the guy in the waterfall who says he won't come until he's finished his workout, when does he get finished? I figured he would go with you after you go through the mansion and beat giocomo or whatever his name is but he still won't come
