Is It Possible To Miss Paralogues?

The chapters appear as soon as you hit S-Rank, but the Child's stats and skills aren't decided until you play the chapter.

Every child inherits the last equipped skill of each parent, except for Chrom. All of Chrom's daughter's inherit Aether and all of Chrom's sons inherit Rightful King.

There's also a formula that calculates their base stats. This formula is:

[(Mother's current stats - Mother's class base stats) + (Father's current stats - Father's class base stats) + Child's absolute base stats] / 3 + Child's class base stats

As far as I can tell, this formula is applied when you PLAY the prolouge, NOT when you unlock it.

I'd find Rally Spectrum much more useful than Ignus, but if you're planning on making them into a certain class, then you may as well have them learn that skill themself and pass on something from a class that you're not planning on taking them to or that's male-specific.

The only prupose Morgan has in my army is running around tossing Rally bonuses on everyone.

My problem with Morgan and the rest of the kids in general is that they come at level 10, and by the time you can beat the stage to unlock them they're in the border where they still need work to catch up to your party. Even if I can, I don't want to play the same two DLC maps all day just to catch them up.

The things that come from gender-specific classes. Pretty much whatever comes from the Peg Knight, Troubador, Fighter, and Barbarian trees, barring gender specific classes that come from DLC that we haven't gotten yet.
