Is virtual hosts how I would control where the sub domains and the main domain is located?

Yes. Here is the VirtualHost entry I have set up for the Wordpress blog I have, for example.

<VirtualHost *:80>
        ServerAdmin chris@chigs.me
        DocumentRoot "/var/www/wordpress/"
        ServerName blog.chigstuff.com
</VirtualHost>

Its simple and there could probably be more, but thats just for the sake of being simple and getting it done.

By the way, this would have been better fit for Server Administration.
