Oddly enough, SnS and Hammer are the two weapons I find the easiest for Rajang.
For SnS, I'd recommend a poison or ice SnS, like the Frost Edge+ >>> Ice Fang SnS or Princess Rapier >>> Royal Rose SnS for poison.
As for tactics, with a SnS you want to be as close to him as possible, but
always run around him in a circle (generally run clockwise around him, which means you'd be going to your left.)
After each of his attacks lands, use your leap attack to close the gap, give him two more solid hits, and then roll forward as he's about to face you / attack you. He'll normally never get a solid hit on you. If he does, make sure you have the proper healing items to eat on the go, since that's the strong point of SnS.
If you have a lot of trouble, don't be afraid to bring some traps along with some bombs.
For armor, I'd suggest something suitable for an SnS, one such example would be Tigrex armor, quick-eating is a great skill for SnS, and the other skills presented by Tigrex are pretty good as well. You may also want to consider Narga armor, since your evasion will be much better with that set as opposed to the others. So if you're having trouble evading him, go for Narga armor.
For hammers, I'd suggest a hammer along the Diablos Hammer >>> Chaotic Order line, or Onslaught >>> Juggernaut line. If you're interested in getting horns, then go for Icy Impact >> Axion. You could also go for the Devil Masher >>> Iron Devil's Soul hammers that have paralyze attribute. It's always amusing getting Rajang paralyzed and smashing its face in. But you have to be persistent with weaker attacks to take advantage of it.
When fighting Rajang with a hammer, it's best to minimize your ability to get stunned in any way. To which I would suggest getting some sort of Blango armor or equivalent armor that gives you Quake Resistance. After that, you can get what ever you like along with the set. Evade or Evade Distance Inc, like from Narga armor, never hurt either. If you can get a set with both then you'd be stylin' against Rajang.
Generally, you'll want to circle Rajang just like you do with the SnS, but even closer, and generally with your charge-pound on the whole time. Which brings up another important point, you want mega juice.
Plenty of mega juice. Normally, don't ever try to attack Rajang when it's facing you. But you'll want to get in some good triple-pounds on it while it's trying to turn around.
Generally the final swing will always stagger it if it makes contact. Use that to your advantage to roll away before it has a chance to retaliate.
