They're different machines for different people. The 3000 has a slightly bigger screen, and its main selling point was the screen which is said to greatly reduce glare (probably a life saver on trains/busses). You will need a memory stick for a 3000, but they're cheap now anyway.
The Go is very different, its got a different design, an internal hard drive, you can put a memory stick in but it's a different type of stick, and it takes a different type of USB cable as well. It's not the same as either of the three previous PSP generations. The main talking point is the fact that it can't take UMD discs, you have to download games for it.
This could be important for you: if your parents bought you Monster Hunter on disc, the Go won't be able to play it.

Monster Hunter games have always been difficult, but manageable, because of the claw. I think some people say it's a bit harder on the Go, but hey, it wasn't easy to begin with. You should remember that, on the Go, you can use a PS3 dualshock controller. This means that, while it's a bit more difficult on the go, when you're playing it at home it's going to be much easier IF you have that controller.

I'd say the 3 free games deal is to encourage Go purchases, and thus you almost certainly wouldn't get it on a used Go. That said, are you really going to be able to find a used Go? They aren't that old, and didn't even sell that strongly. Sure there'd be used ones around from dissatisfied customers, but that many?
