Billed as the beginning of the "true" ending of Neon Genesis Evangelion, Death & Rebirth is divided into 2 parts: A movie re-telling of the first 24 episodes, and the first part of the true episode 25. Death also features some previously unseen footage from the anime and a slightly different perspective. Rebirth continues the story where anime episode 24 left off.
While I liked Death's format, it's hard to watch some of it without slow-motion because some of the kanji flashes so fast you can't catch all the translations & sayings at normal speed, and there's not enough new footage to make it totally worthwhile. Rebirth nicely adds continuity to the story without missing much from where the anime left off, and does a good job taking the plot in another direction.
This is a good place to start watching if you want to check out the anime but don't want to sit through all 26 episodes yet. If you plan to get End Of Evangelion, though, you may want to skip the Rebirth part because both have most of the same content despite being on different DVDs.
