As you know, the goal is to keep as much air time as possible. You can jump off rails or aim for the best ramp, but if you hit a high ramp, you are best off hitting one of the trees with your skiis. This suspends your air time animation whilst keeping points, and also keeps you flying for longer if you recover in your helicopter recovering style.
