While the spinning logo plays [in the beginning of the game] do the following:

Hold up and press fire
Hold down and press fire
Hold left and press fire
Hold right and press fire

[do the above with a joystick]

You should hear a voice saying: LucasArts !

Now during the game press:

+ to get full health
esc to skip the current section or level.
