As much I enjoy this, I have to agree with a lot of your concerns. It's more over-the-top than most golf games, but it doesn't do much outside of provide goofy items to set itself apart. It's still a golf game first and foremost. I feel like if Camelot hadn't put as much focus into castle club they would've put more thought into course designs and character differences, which are there, but it doesn't seem to be as relevant as in Toadstool Tour.

I didn't think the menus were that bad, but I do understand the feelings towards castle club. I had thought it would be an interesting update on the RPG concept of Advance Tour and to be fair I have enjoyed it to a degree, but the implementation of it here just seems terribly confused and it's also resulted in the unnecessary split of content. Instead of accessing everything from a single hub you instead have to access it from two entirely independent hubs.

I think a stat distribution similar to the old Tony Hawk games would have fit in nicely. The end result might be similar if the characters can all max each stat, but if there was a limit to how many points could be applied to each it would open up more unique ways for players to grow their favorites. Might of made for more interesting games.
